  • 1 medium head of napa cabbage (weighing approximately 2 pounds)

  • 1/4 cup of iodine-free sea salt or kosher salt

  • Water (preferably distilled or filtered for purity)

  • 1 tablespoon of finely grated garlic (about 5-6 cloves)

  • 1 teaspoon of freshly grated peeled ginger

  • 1 teaspoon of granulated sugar

  • 2 tablespoons of fish sauce or salted shrimp paste (or 3 tablespoons of water for a milder touch)

  • 8 ounces of Korean radish or daikon radish, peeled and sliced into matchsticks
